Medium size chopper/cleaver suited to most food prep.
The carbon steel blade comes from an old two-person cross cut saw found in the milking shed of a long retired dairy in the hills behind Apollo Bay. Handle is carved from Otways Black Wood & fixed with aircraft grade epoxy.
Making the blade is a (mainly) six-step process: roughly cut the shape from the donor stock: anneal (soften) the shape in my wood-fired forge: refine & grind to the desired shape: re-harden to about R60 in the forge: hand finish, attach the handle.
Being a high carbon, heat treated steel,
this blade will keep a superior edge, but slowly discolour with use & rust if not kept clean & dry. Do not wash it…wipe it! Sharpen on an oil stone. Rub cooking oil into the handle if it looks dry.
